Duke's is fortunate to have Michael Perkins, one of the best Executive Chefs in Nevada. As Food & Beverage Director at Dukes, he not only administers the staff of Vivo and the Bar, but he also trains Vivo's cooks in the delicate techniques he has aquired over the years that make his cuisine a must to try and enjoy. He worked for years as an Executive Chef at Caesars in Las Vegas and has won numerous awards for his cooking and artful preparation of dishes. Mike can take a simple dish and make it as elegant as any
you've ever tasted or seen. We thought you might want to try some of his simple but exquisite dishes for yourself at home, so we set up this monthly link. We will also make sure to archive all of these great recipes so that you can have your friends visit the website to pick them up for themselves. Vegetable Hamburger Torte

Ingredients:
1 pound ground beef
3 eggs
1/4 cup chopped onion
1/4 cup chopped green pepper
1/4 cup chopped celery
1/4 cup chopped mushrooms
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup butter
1/4 cup grated parmesan cheese
1 French loaf cut in half

Directions:
Cook ground beef and onion; drain off all the fat. Add all ingredients except eggs, cheese and French loaf. Cook until tender. Mix eggs and pour over ingredients, stirring constantly, Remove from heat. Put bottom half of bread in foil and scoop out inside of bread leaving a cavity. Fill with mixture. Butter top half and place it over bottom half. Completely enclose loaf in foil and bake for 15 minutes in preheated oven at 350 degrees. Remove from heat and slice. Sprinkle cheese on each slice while still hot.
